Nigori Roughly filtered

By definition Nigori means ‘cloudy’ and this style of sake is thicker and creamier in texture, with a milk-like appearance. The ‘cloudiness’ comes from the rice sediment which remains in the sake after it has been passed through a special coarse-mesh filter. People in Japan have been enjoying rough-filtering sakes for many centuries.

Style

Earthy and sweet, acidic, rice-derived aromas are powerful and thick on the nose. There is a pronounced dairy aspect like cream, yogurt or probiotic drinks, and sweet almond milk pudding, topped off with faint hints of banana.

Thick and creamy on the palate. It delivers a smooth, mouthcoating layer across the tongue, which in turn delivers sweet flavors of overripe banana, milk, and cantaloupe. Full, bold acidity makes this a tangy experience near the cheeks.

The finish is slightly grainy, but much less thick and persistent than other nigori sake types. Not cloyingly sweet, the bold acidity keeps this medium-long finish surprisingly crisp and refreshing.
